A Ranch Built on Doing Things Right

A family ranch built on a simple belief: that doing things right — from pasture to product — is always worth it.

 The Pauls Cattle Ranch sits on 300 acres in Defuniak Springs, Florida, in the heart of Walton County. It's a working family operation -- the kind where the cattle know the sound of the truck and the pastures get walked more than they get looked at from a screen. 


We raise our cattle on rotated pastures for most of their lives, then move to a finishing pen for a period of grain feeding before processing. That step is what gives the beef its marbling and flavor -- and its also why we only sell by reservation. We need lead time to finish an animal property instead of rushing it to meet an order. 


Absolutely no antibiotics, GMO feed, or fillers are used in the ground beef. 






How it Works

Taking Reservations!

Because we finish every animal on grain before processing, we only take reservations for future orders. 

Step 1: Reserve Your Share

Chose a quarter, half, or whole cow and fill out our cut sheet with your preferences. We charge $8 pound hanging weight which includes processing. A non-refundable deposit of $750 holds your place in line. Please note that only half and whole orders can choose their cuts of meat. 

Step 2: We Finish the Cow

Your animal spends time on rotated pastures, then moves to our finishing pen for grain feeding -- no shortcuts, no antibiotics. 

Step 3: Processing

Once finished, the animal is then taken to our processor where they will hang the meat, get the weight, and cut the meat to the specifications on your cut sheet. The meat will then be vacuum-sealed and frozen. The final balance is due once the hanging weight has been established and communicated to the customer.

Step 4: Farm Pickup

We'll call or text when your order is ready. All pickups happen here at the ranch -- we do not ship.

How much meat you actually take home

These are typical ranges -- actual weight depends on the size of the individual animal and the specific cuts you choose on your cut sheet. 

Quarter Cow: 100 -115 lbs. Typical Packaged Meat

Good for 1 - 2 people


Freezer space needed: 4-6 cubic feet


Mix of steaks, roasts, & ground beef. You cannot customize 1/4 cow.

Half Cow: 200 - 230 lbs. Typical Packaged Meat

- The Family Share - 


Good for a family of 4


Freezer space needed: 8-12 cubic feet


You can customize the cuts you receive.

Whole Cow: 400 - 460 lbs. Typical Packaged Meat

- The Full Reserve -


Freezer space needed: 16-20 cubic feet


You can customize the cuts you receive.

Is the Meat Vacuum Sealed?

Yes! All meat comes frozen and vacuum sealed. Vacuum sealed packages take up less space than wrapped or butcher paper-wrapped cuts. Chest freezers are generally more efficient for bulk storage.

Rule of Thumb

A live animal yields roughly 60% of its weight as hanging weight, and roughly 60-70% of hanging weight comes home as packaged, freezer-ready meat after bone and trim loss. Choosing more bone in cuts (like bone in roasts) increases take-home weight; choosing more boneless cuts decreases it slightly.
